Quesería La Peral (Dairy La Peral) is a family-owned business founded in 1923. It is located in the picturesque village of La Peral, in the Picos de Europa range of mountains (Asturias). Their cheeses are the result of combining tradition, know-how and state of the art technology.
Acknowledged as one of Spain's blue cheeses, Peralzola is a semi-soft, blue veined cheese made from pasteurised ewe´s milk. When young, Peralzola shows an ivory white colour with a light blue vein, it has a creamy texture and a delicate, nutty after taste. However, as the maturation process continues, the cheese hardens, with the colour becoming yellowish and the veining almost black. The result is a perfectly balanced cheese which is rich in flavours with a unique piquant taste, smell and aroma.
It is matured for 60days in natural cellars. A blue cheese lovers dream.
