ABV: 17.5%  

Amontillado is the fusion of 2 types of ageing - biological and oxidative.  It starts its ageing process as a fino/manzanilla under the ' Velo de Flor' throughout its early years in the 'Criaderas' which gives it, its sharp notes which accentuates its dryness.  When the 'flor' disappears the wine starts to oxidise that gradually darkens the wine providing concentration and complexity.

Old golden in colour with the aroma of a praline chocolate box, chocolate liqueurs, toasted caramel, nuts, bitter almond and natural woods.

Powerful in the mouth, filling the palate with a silky sensation.  Iodine and bitter almonds appear in the mouth with spice and warmth, leaving a fresh taste during its long finish.

Perfect with almond, morcón (type of chorizo), Ibérico ham, grilled asparagus, artichokes, sautéed mushrooms, oven lamb and rice with rabbit.
