Esperanza del Castillo is a family company, founded in 1952. It is based near the town of Pulgar (in the Montes de Toledo district) which is surrounded by pasture lands and the local breed of Manchega sheep.
We love this company because they control the production process from start to finish, using local expertise and traditional tools in the same way since 1952. For example, covering the cheese with cloth during the maturation process or using EVOO to wash the rind.
About the product: Esperanza del Castillo has been cured for a minimum of 9 months. It has a richly flavoured caramel taste. It is utterly delicious and addictive.
