Yep, we’ve been ageing this in house for over 6 months now. The marbling was already incredible on this rack personally chosen for us. Now having had 180 days in our dry ager set at 1.5 degrees and to a humidity of 81%, it’s maturity in flavour and texture is simply incredible. Considering the fact that the beef loses weight every week it is aged, this is also an incredible bargain!
