Mojama is a salt-aired and air-dried tuna loin fillet, also called 'Sea Cured Ham' from the South coast of Spain.  An exquisite & unique delicacy and the most sought after fish in Andalucian cuisine.  The difference between fresh tuna and cured Mojama is it has much more intense colour, aroma and flavour.  This mojama is sliced and preserved in olive oil, making it full of proteins and nutrients.
