Rooftop Smokehouse was born on a rooftop in Barcelona, between good friends and an empty wine barrel.
After their household equipment became too small, they moved to the n Lehmann Factory, a secluded area in Barcelona's Eixample where they rehabilitated an old chimney from 1890 that still operates today. It is one of the most bucolic spaces in the city and one of the most special traditional smokehouses in Europe.
This kimichi goes through wild fermentation and is unpasteurised. Eat it as it is or with pork or octopus. It has a spicy point, with depth and full of flavour.
