Pronounced 'Tcha-Ko-Lee'
Txakoli is not a fully sparkling wine but has a natural spritz. It is traditionally poured from head height into the glass held at waist level. This flamboyant serving aerates the wine and helps add a certain 'sparkle'.
This wine is entirely made by hand in small batches and fermented in stainless steel tanks. Native yeasts are used and the wine is aged on the lees for 6 weeks. The wine is then allowed to settle naturally by gravity and is minimally fined or filtered.
It is a crisp, refreshing wine with a slight effervescence (100% natural, nothing added). Notes of strawberries and red apples.
Excellent with seafood, cured meats and hard cheeses.
